Ansul Systems for Every Commercial Kitchen

A commercial kitchen fire is not like most other fires. Cooking oil ignites at high temperatures and burns intensely. When a deep fat fryer, range, or griddle catches fire, the heat, speed, and fuel available to that fire make it one of the most dangerous events that can happen in a catering operation. Ansul kitchen suppression systems are designed specifically for this environment — and nothing else.

For Restaurant Owners and Caterers

A kitchen fire during service can close your operation for days or weeks, destroy expensive equipment, and in the worst cases end the business entirely. Your insurers will ask whether a suppression system was fitted and whether it was in service. Your fire risk assessment may specify one as a required measure. And the relevant British Standard — BS 15000 — sets out the requirements for automatic suppression in commercial cooking operations.

Bell installs Ansul R-102 and Ansul PIRANHA systems sized and configured for your specific appliance layout, canopy dimensions, and duct arrangement. We carry out a site survey, produce a nozzle and pipe design, fit the system, test every component, and hand over with a commissioning certificate. We also set up your six-monthly service schedule from day one so your compliance record is in order before the first service falls due.

For Hotel and Hospitality Operators

Hotel kitchens operate long hours, often with multiple cooking lines and high fuel loads from deep fat fryers, solid-fuel grills, and high-output ranges. The consequences of a kitchen fire in a hotel extend well beyond the kitchen itself — guests, bedrooms, and the wider property are all at risk if a fire is not controlled at source.

Bell designs Ansul systems for hotel kitchen configurations including multiple cooking banks, split canopy arrangements, and kitchens integrated with existing fire alarm infrastructure. We carry out all gas isolation wiring and work with the hotel’s facilities team to minimise service downtime during installation

.

For School & Healthcare Kitchens

Managing fire safety across multiple buildings means keeping on top of maintenance schedules, service records, and compliance documentation for every site. A missed annual service or a misspecified extinguisher creates both a safety gap and a liability.

We offer planned maintenance contracts covering your entire extinguisher inventory, with scheduled visits and records issued after every service. One contractor, full accountability across all your sites.

What Is an Ansul Kitchen Fire Suppression System?

Ansul is a brand of Tyco Fire Protection Products and is the market-leading name in commercial kitchen fire suppression. An Ansul system is an automatic wet chemical fire suppression system designed specifically to detect, suppress, and control fires in commercial cooking equipment and the ventilation canopy above it.

How It Works

The system consists of a pressurised tank containing a wet chemical agent, a network of pipework running through the canopy and duct, and a series of nozzles positioned above each appliance and inside the duct. Detection is provided by fusible links — heat-sensitive elements mounted in the canopy above the cooking equipment.

When a link reaches its rated temperature, often around 138°C depending on the system design, cooking equipment, canopy arrangement and fusible link specification, the system activates automatically.

On activation, the wet chemical agent is discharged simultaneously through all nozzles covering the affected cooking zone. The agent — a potassium carbonate-based liquid — cools the burning oil rapidly and creates a soapy foam layer, known as saponification, over the surface of the burning grease. This cuts off oxygen and helps prevent re-ignition. At the same time, the system activates automatic gas and electrical shut-off to the cooking equipment, removing the fuel source.

The Ansul R-102 System

The Ansul R-102 is one of the most widely installed commercial kitchen suppression systems in the UK and globally. It is approved for use on deep fat fryers, ranges, griddles, chain broilers, wok ranges and solid-fuel appliances.

The R-102 uses a liquid agent delivered through a network of nozzles specific to each appliance type, providing coverage precisely matched to the fire risk of each cooking surface. It is listed to UL 300 and approved under the relevant sections of BS 15000.

The Ansul PIRANHA System

The Ansul PIRANHA system is designed for kitchens with higher cooking volumes, larger appliances, or more complex layouts than the standard R-102 range covers.

It uses a different nozzle configuration and agent delivery approach that provides greater flexibility for non-standard canopy geometries, extra-wide cooking banks, and high-output fryers with larger oil capacities.

Key Components

ComponentFunction
Agent Tank Pressurised stainless steel cylinder containing the wet chemical agent. Size is determined by the coverage area and appliance types in the design.
Nozzles Stainless steel discharge nozzles positioned above each appliance and inside the duct. Each nozzle type is specific to the appliance it covers — fryer nozzles differ from range nozzles and griddle nozzles.
Fusible Links Heat-sensitive detection elements mounted in the canopy. When a link reaches its rated temperature, it breaks and triggers system discharge. Links are replaced at every six-monthly service.
Mechanical Gas Valve Automatic gas shut-off valve installed in the gas supply line to the cooking equipment. Closes on system activation, cutting the fuel supply.
Electrical Micro-Switch Cuts electrical power to cooking equipment on system activation. Prevents re-ignition from electric heating elements after suppression.
Manual Pull Station Allows staff to manually trigger system discharge in an emergency, without waiting for a fusible link to activate.
Control Head The actuator assembly on top of the agent tank. Receives the signal from the fusible link cable or manual pull station and triggers the tank to discharge.

How Our Ansul System Installation Works

Ansul systems should be designed, installed, commissioned, and maintained by suitably trained and competent kitchen suppression specialists in line with manufacturer requirements, relevant standards, and the agreed fire safety specification. The nozzle selection, pipe routing, and coverage calculations cannot be estimated from a floor plan — they require a physical survey of the cooking equipment, canopy dimensions, and duct arrangement. Here is how Bell manages the full process

1

Free Site Survey

A kitchen suppression specialist visits your premises to assess the cooking equipment, canopy dimensions, duct configuration, gas supply arrangement, and available mounting positions. We record the make, model, and dimensions of every appliance under the canopy. There is no obligation and no charge for this visit.

2

System Design and Nozzle Selection

Using the survey data, we produce a full Ansul system design specifying the agent tank size, nozzle types and positions for each appliance, fusible link locations, pipe routing, gas valve position, and electrical shut-off wiring. The design is produced in accordance with the Ansul R-102 or PIRANHA design manual and the requirements of BS 15000.

3

Fixed-Price Quote

You receive a fixed-price quote covering the agent tank, nozzles, pipework, fusible links, gas valve, electrical micro-switch, manual pull station, installation labour, testing, and commissioning. No estimates. No hidden costs. The price is based on the actual system designed for your kitchen.

4

Professional Installation

The system is installed by suitably qualified specialists in line with the agreed design, manufacturer requirements, and relevant standards, closed or during off-service hours to minimise disruption. The agent tank is mounted in an accessible position, pipework is run through the canopy, nozzles are positioned and secured, fusible links are fitted, and gas and electrical shut-off connections are made and tested.

5

Commissioning, Testing, and Handover

The completed system is tested in full — actuator operation, fusible link cable tension, nozzle coverage check, gas valve closure on activation, and electrical shut-off confirmation. A commissioning certificate is issued on the day. We explain the manual pull station operation to your kitchen staff and confirm the six-monthly service schedule.

Ansul System Features

The Ansul R-102 and PIRANHA systems are purpose-built for the specific conditions of a commercial kitchen fire. Here are the features that make them the standard choice for kitchen suppression across the industry.

Wet Chemical Agent Formulated for Grease Fires

The potassium carbonate based agent is specifically developed to suppress Class F cooking oil fires. It cools the burning oil, forms a foam blanket over the fuel surface to cut off oxygen, and prevents re-ignition — which a standard dry powder or CO2 extinguisher cannot reliably do on a deep fat fryer or range.

Simultaneous Multi-Nozzle Discharge

All nozzles covering the activated cooking zone discharge simultaneously when the system triggers. This ensures that every appliance under the canopy is covered at the same moment, rather than sequentially, which is critical when multiple appliances share a cooking line.

Automatic Gas and Electrical Shut-Off

The mechanical gas valve and electrical micro-switch cut fuel and power to the cooking equipment at the point of activation. Removing the fuel source is as important as the chemical suppression — without it, the fire can reignite from the heat of the appliance after the agent is exhausted.

Manual Pull Station

A red manual pull station mounted in an accessible position allows any kitchen staff member to trigger the system immediately, without waiting for a fusible link to activate. This is particularly important in a visible fire situation where speed of response matters.

Appliance-Specific Nozzle Design

Each nozzle type in the Ansul system is engineered for a specific appliance — fryer nozzles differ from range nozzles, griddle nozzles, wok nozzles, and duct nozzles. Coverage is matched to the specific fire risk geometry of each cooking surface, not applied generically across the whole canopy.

UL 300 Listed and BS 15000 Compliant

Ansul R-102 and PIRANHA systems are listed to UL 300, the certification standard for commercial cooking equipment suppression systems. Every Bell installation is carried out to the requirements of BS 15000 and the Ansul design manual, and a certificate of compliance is issued on completion.

Post-Fire Recharge Service

After any activation — whether from a real fire or an accidental trigger — the system must be recharged before being returned to service. Bell provides post-fire recharge and inspection as a priority call-out, restoring system readiness as quickly as possible to minimise the time the kitchen operates without suppression cover.

Why Choose Bell for Your Ansul System?

Competent Kitchen Suppression Specialists

Ansul kitchen suppression works should be carried out by suitably trained and competent specialists in line with manufacturer requirements, relevant British Standards, and the agreed system specification.

Bell Fire & Security coordinates the process for customers across Scotland, helping ensure the system is properly specified, documented, serviced, and maintained as part of the wider fire safety strategy for the premises.

Correct Design from the Start

The most common cause of Ansul system failure in a real fire is an installation that was not designed correctly for the appliances it covers. Nozzle type selection, position, and pipe sizing must follow the Ansul design manual precisely.

Bell produces a full design drawing for every installation and retains it for reference at every service visit, so if the kitchen layout changes, we know immediately what the implications are for the system coverage.

Six-Monthly Servicing on Schedule

Ansul systems must be serviced every six months under BS 15000 and the Ansul service manual. Each service includes replacement of fusible links, inspection of nozzles and blow-off caps, verification of agent tank pressure and weight, actuator testing, and confirmation of gas valve and electrical shut-off operation.

Bell tracks service dates for every system we maintain and contacts customers in advance of the due date, so no service is missed.

Trusted Since 1919

Bell Fire & Security has been protecting commercial premises in Scotland for over 100 years. For a kitchen suppression system that your business, your insurer, and your regulators depend on, working with an experienced contractor is not a trivial consideration.

More than 60% of our work comes from repeat customers.

Rapid Post-Fire Response

When an Ansul system activates — whether from a real fire or an accidental trigger — the kitchen cannot reopen until the system has been recharged and re-commissioned. Bell provides priority call-out for post-fire recharge across Scotland, aiming to restore system readiness as quickly as possible to minimise the time the kitchen is off cover and the business is off service.

Ansul System Maintenance and Servicing

An Ansul system that is out of service or has a degraded component is not protecting your kitchen. Fusible links corrode and lose calibration in a kitchen environment. Nozzle blow-off caps accumulate grease. Agent tanks discharge pressure over time. A system that has not been serviced to the required schedule may fail to activate when it is needed, or may activate incompletely.

Why Ansul Systems Require Six-Monthly Servicing

Ansul systems are normally maintained on a six-monthly basis in line with manufacturer requirements, relevant standards, insurer expectations, and the system service manual. A system that has missed its required service interval may be treated as non-compliant by insurers, auditors, landlords, or enforcing authorities, depending on the premises, policy conditions, and fire risk assessment.

Post-Fire Recharge

After any activation — whether from a fire or an accidental trigger — the Ansul system cannot be placed back in service until it has been recharged by a certified engineer. The agent tank must be refilled, all fusible links replaced, actuator components inspected and reset, and the full system tested before a new commissioning certificate is issued. Bell can arrange priority post-fire recharge and recommissioning support. The kitchen must not resume operation under the canopy without a valid certificate confirming the system is in service.

Post-Fire Recharge

Bell can arrange priority post-fire recharge and recommissioning support. The kitchen must not resume operation under the canopy without a valid certificate confirming the system is in service.

System Modifications

When cooking equipment is changed, added, or repositioned under the canopy, the Ansul system design must be reviewed and updated before the kitchen resumes operation. A fryer moved two feet from its original position, or a new range added to the cooking line, may take it outside the coverage of the existing nozzle arrangement. Bell carries out system modification assessments and produces updated design documentation whenever the cooking equipment layout changes

What the Six-Monthly Service Includes

Service ItemDetail
Fusible Link Replacement All fusible links are replaced at every service regardless of condition. Links degrade in a kitchen environment through heat cycling, grease accumulation, and corrosion. They cannot be visually assessed for reliability — replacement is mandatory.
Nozzle and Blow-Off Cap Inspection Every nozzle is inspected for blockage, damage, and correct positioning. Blow-off caps are checked and replaced where necessary. A blocked nozzle will not discharge agent to the appliance it covers.
Agent Tank Inspection The agent tank is weighed and pressure-checked. If the weight or pressure has fallen below the acceptable range — indicating a leak or partial discharge — the tank is recharged or replaced.
Actuator Mechanism Test The control head and actuator assembly are tested for correct operation. The actuator cable tension is checked and adjusted as required.
Gas Valve Test The mechanical gas shut-off valve is tested to confirm it closes fully and promptly on system activation.
Electrical Micro-Switch Test The electrical shut-off circuit is tested to confirm it cuts power to cooking equipment on system activation.
Manual Pull Station Inspection The manual pull station is inspected and tested for correct operation and accessibility.
Service Documentation A full written service record is issued on the day, confirming all items inspected, any deficiencies found, and remediation carried out. This record forms part of your compliance file.

How Much Does an Ansul System Cost?

Ansul system installation costs depend on the size of the kitchen, the number and types of cooking appliances, the canopy arrangement, and whether a gas valve and electrical shut-off need to be installed as part of the works. Here are the main factors that influence the price.

Number and type of appliances

A small kitchen with one fryer and a two-burner range requires fewer nozzles and a smaller agent tank than a large cooking line with multiple fryers, a solid-fuel grill, and a wok range. The number of nozzles is the primary cost driver after the base system cost.

Canopy and duct configuration

A standard linear canopy above a single cooking bank is the most straightforward installation. Double-island arrangements, split canopies, and non-standard canopy geometries require more complex pipe routing and additional nozzle positions, which increases installation time and cost.

Gas valve and electrical works

If a mechanical gas shut-off valve or electrical isolation circuit is not already in place, these must be installed as part of the system. The gas valve work is carried out by our Gas Safe registered engineers and the electrical work by our SELECT-certified electricians.

Access and working conditions

Kitchens that can be worked in during off-service hours are straightforward. Kitchens with restricted access, low ceilings, or extensive existing equipment that limits the pipe routing options add installation time.

Ongoing servicing

Six-monthly servicing is a fixed cost per visit, based on the number of nozzles and the scope of the service schedule. Bell can provide a per-visit price and an annual maintenance contract covering both service visits.

A fixed-price installation quote can only be produced after a site survey. Ansul system costs cannot be estimated reliably from a kitchen description or floor plan — the nozzle count and pipe routing must be determined from a physical assessment of the cooking equipment and canopy.

Ansul System Legal Requirements and Compliance

Commercial kitchen fire suppression is often required or strongly recommended where the fire risk assessment identifies a significant cooking oil, deep fat fryer, extraction, or high-output cooking risk. It may also be required by insurers, landlords, licensing conditions, or client specifications. Here is the Scotland-specific legal and regulatory framework that applies and what it means for your business.

Frequently Asked Questions About Ansul Systems

An Ansul system is an automatic wet chemical fire suppression system designed specifically for commercial kitchen environments. It uses a potassium carbonate based agent discharged through nozzles positioned above cooking appliances to suppress grease fires by cooling the burning oil and forming a foam blanket over it to prevent re-ignition. At the same time, it activates automatic gas and electrical shut-off to the cooking equipment. Ansul is a Tyco Fire Protection Products brand and is the market-leading kitchen suppression system in the UK

In Scotland, the Fire (Scotland) Act 2005 and Fire Safety (Scotland) Regulations 2006 require dutyholders in non-domestic premises to carry out a fire risk assessment and put suitable fire safety measures in place. For kitchens with deep fat fryers, high-output ranges, extraction systems, or solid-fuel appliances, the fire risk assessment may identify automatic kitchen suppression as a required or strongly recommended measure. Many commercial insurance policies also require a suppression system as a condition of cover. BS 15000 sets out the standard that kitchen suppression systems should meet.

Fusible links mounted in the canopy above the cooking equipment detect heat. When the air temperature reaches the rated threshold — typically 138°C — the link breaks, triggering the system actuator, which discharges the wet chemical agent through all nozzles covering the activated zone. The agent cools the burning oil and creates a foam blanket over the fuel surface to prevent re-ignition. Simultaneously, a mechanical gas valve closes the gas supply and an electrical micro-switch cuts power to the cooking equipment.

Every six months, as required by BS 15000 and the Ansul service manual. Each service includes replacement of all fusible links, inspection and blow-off cap check on all nozzles, agent tank pressure and weight check, actuator test, gas valve test, electrical shut-off test, and a full written service record. The six-month interval is mandatory — not a recommendation — and is a condition of most commercial kitchen insurance policies.

Replacement of all fusible links; inspection and replacement of nozzle blow-off caps; agent tank weighing and pressure check; actuator mechanism test; gas valve closure test; electrical shut-off test; manual pull station inspection; and a written service certificate. If any component is found to be defective or out of specification, it is replaced during the service visit. Bell issues a service certificate on the day, confirming the system is in current service.

The kitchen cannot resume operation under the suppressed canopy until the system has been recharged and re-commissioned by a certified engineer. The agent tank must be refilled, all fusible links replaced, the actuator assembly inspected and reset, and the full system tested. Bell provides post-fire recharge as a priority call-out service. A new commissioning certificate is issued before the kitchen reopens.

Cost depends on the number and types of cooking appliances, the canopy configuration, the agent tank size required, and whether gas valve and electrical works are needed. A fixed-price quote can only be produced after a site survey — Ansul system costs cannot be estimated from a description or floor plan. Contact Bell to arrange a no-obligation site assessment.

Yes, in most cases. Any change to the cooking equipment — adding a fryer, replacing a range with a different model, or repositioning appliances under the canopy — requires the Ansul system design to be reviewed. A nozzle that was correctly positioned for one appliance may not cover a replacement appliance correctly. Bell carries out system modification assessments whenever cooking equipment changes and updates the system design documentation accordingly.
